Good to see you.
Enjoy your week in NYC, wonder what is bringing you there 
Your ex getting out of your life, is I think a very positive step for you, you can get on with yours too!
Flying is fine honest, its fun! If you are nervous do a google for the scientific reasoning as to how planes stay up in the air, I saw it on TV once and it was really cool!
Have a great trip, visit all the haunts (especially Macys!, My top things to do in NYC are:
1. Lunch at the Ritz in the brasserie (can't be sure how vegan friendly it is though, sorry)
2. A romantic stroll in Central Park
3. Bagels..real NYC bagels, lots of them (are they vegan?)
4. Visit Wholefoods Market in Columbus Circle (Dalia tipped me off on this one)
5. Shopping in Macys
6. Wandering around Chinatown
so many more things too...make sure your local guide gives you a good tour!
