I personally think the best thing to do is just to follow your body. I too was diagnosed with malnutrition back in the summer because I was cutting so many things out of my diet that I just wasn't getting adequate nutrition. Anyways, my doctor put me in the hospital for 8 days where they basically forced me to eat a "balanced" diet (long story short, they thought I had an eating disorder).
Basically, I found that for my body, the best thing I can do is eat a proper well-balanced diet (which for me included adding milk back in). I just make sure I drink the lactose free milk and take lactaid pills if I'm having something else, and I stay away from red meat and caffeine still, but other than that I can eat pretty much anything. I still have problems but not as bad as before, and my weight finally stabilized and a lot of my blood levels improved (B12 and potassium for example).
I hope this helps...I don't know much about the sugar thing, I know I can tolerate sugar ok. I actually have a small bowl of ice cream most nights (which a lactaid pill) and it seems to go down ok (knock on wood).
