These sound a lot like the "snowball" cookies that my father makes every year at Christmas, and they seem to stay fresh for a really long time. I would probably take Amie's (kyricat's) advice over mine on this one, but I think they'll be fine without freezing or refrigeration - just be sure to store them in some sort of airtight container. If I know I'm going to be storing something like that, I put them in ziploc bags and roll all the air out before sealing them.
