That's terrific! Zucchini is very easy to cook. However, it gets real "soggy" and "loose" if you over-cook it, so be careful. I just toss a little soy butter in a fry pan and slice up the zucchini (don't peel it if you can tolerate the skin), then lightly saute it over medium heat, flavoring it with a little salt and pepper. That's it. What could be easier? Remember, don't cook it until it's too well done. I hate it that way. Ew. Now, lets talk STUFFED zucchini. Oooh, baby!
