This is how I do zucchini: I put a tiny bit (maybe a teaspoon) of soy margarine in a bowl, add the zucchini, and microwave it till tender, about 5 minutes, stirring it once halfway through. Then I season it with salt and pepper, and Adam usually puts Parmesan cheese on his. You can also skip the margarine and use a little water instead.
It's just as easy to use the same method and saute it all in a frying pan, but I figure the microwave means it's already in the serving bowl... one less pan to wash.
