I have had IBS most of my life, and find it hard to gain weight. When my IBS was at its worst, I did lose weight. This is not really a 'symptom' of IBS, but it is related since IBS will affect what you eat and how much. When I had really bad attacks, I did not eat as much, and this is why I lost weight. Also, foods that are high in fat make IBS worse, so following a low-fat diet helps IBS but will not help in gaining weight.
Some things I have done to gain weight are: eating more, eating small meals spread over the day, eating more safe protein (fish, chicken/turkey breast, egg whites) and doing weight-training.
