As far as snacks go, I like hummus and crackers, or soy crisps. Some people really love to take bread and peanut butter or other fillings to make sandwiches. Also, Luna Bars are great because they don't take up too much space. For meals, I do really well with canned soups, and I am one of the few that can handle beans (can you bring Beano with you?) If you have a fire or a little hotplate or anything, you can make stews by chopping up veggies like carrots, and throwing them in with some lentils or dry soup mix (my favorites are lentil, black bean, and split pea) which you can probably get at your local HFS. If you can't find anything like that, look for Amy's canned soups, which they have pretty much anywhere.
