Not doing so good

I was wondering if it is normal to have a couple weeks of rough times after having something that didn't agree with you. If I had known I would feel bad for 2 weeks I wouldn't have ate it! But is that the case or is something else bothering me? I keep a food journal and everything had been going well and now my bloat and pain and sometimes gurgles are back. I don't even want to say my tummy hurts after telling everyone about my fabulous diet. I am bloating after eating perfectly safe food and my stools are a bit hard too. I'm not sure what is going on, but I tell you what I am going to be extremely strict for awhile- no bites of anything bad even on a full stomach. Any comments, help, suggestions?

IBS-A for 20 years with terrible bloating and gas. On the diet since April 2004. Remember this from Heather's information pages:
"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!
