...there are definitely some pudding mixes that are vegan (and therefore dairy-free). Jell-O vanilla instant is. And I've found it does firm up with soy milk, although I've heard some people say it doesn't. Can't hurt to try!

Ryry, the only other item I saw that was a "maybe" is the cornbread mix - just check the box for dairy products, and if there's none, you're good to go. Otherwise, it looked great! I've been doing the diet for a couple months, and I'm starting to think in the direction you are - going veg. I haven't found it to be too much more expensive so far, first because I'm a DIY'er and I don't mind doing nutty things like making my own seitan from scratch, and second because meat is so darn expensive here. But anyway, good luck with that!

Canned tuna should be fine. Just be careful what you mix it with!
