What an excellent and sensible attitude! Your diet sounds good and I am impressed. It will be great stuff to stabilize with. I am curious about the pudding though. Is that premade pudding? If it is it will be full of milk, but maybe you got the kind you make yourself and you will make it with soy milk. I really don't know what is in that but it was the one thing I was worried about. Good luck!
