I did notice that it was a little softer than pudding made with milk, but it was definitely not "soupy", it did thicken up into pudding. It was instant pudding that you tried? Or the kind you cook? I don't think it works with the kind of pudding you cook. I also used a soy milk that had fat in it. I never buy the totally fat-free kind. Maybe that makes a difference?
