As the poster child for food sensitivities, I can tell you that they CAN develop out of the blue. Having said that, who knows if it was the egg whites or something else. I can't remember now exactly what type of muffins they were but I think you said they were ginger applesauce? Apples do me in, but who knows.
The angel food cake experience does certainly point to the egg whites, so maybe that's it. Anyway, glad you're feeling better today!
