Hi, I have not been diagnosed Celiac, but I do have digestive problems with wheat products occasionally.
Bad news on the bread question: unfortunately, there's no good "white, fluffy" non-gluten substitute. I have found non-gluten breads at my local Whole Foods Market and health food store, but they are very dense. You can find them in the frozen section. They taste OK, but it's no Wonder Bread.
Go to the library or bookstore and get Bette Hegman's cookbooks. They are great. I have tried a lot of the recipes, but have had to make several attempts. It's like learning to cook all over again with the various flours. I had trouble getting the bread to rise (still tasted OK, just was sorta flat!) and cookies to stay together (crumbs are tasty, eh?) But with practice, things are turning out better now.
Good luck to you. Celiac disease is a difficult thing. There's wheat products in practically everything at the conventional grocery store, but with some good base recipes to go from and lots of substitutions, good eating is still possible!
