Fruits & Veggies?

I'm not much of a fruit and veggie eater to begin with, but I know I'm not eating enough of them. When ever I try...it ends up in an attack so I guess I've been avoiding them. I do have applesauce or a banana here and there. Any suggestions on how to incorporate more in my diet without attacks?

I am supposed to keep a journal of symptoms, etc for my GI doc for a month and as I keep track of what I am eating....I noticed I very rarely eat fruits and veggies. I eat baked potatoes....does that count?
