I ain't givin' up yet.
The MIL sounds like she wants to try to fix something you like, but maybe she just needs a little help or guidance. What if you picked out some of your favorite IBS-safe dishes (you could use the recipe board in here or Heather's incredible book, "Eating for IBS"). Copy those that you like and take them to the MIL and say, "MIL, dear, sweet wonderful MIL, I really love these dishes, but I'm not very good at making them myself. Would you fix these for me sometime when I come over for dinner, PLEASE, because you're such a good cook, maybe I can learn from you?"
Do you buy all that? Maybe she will.....
