Hi,

My only suggestion about MIL is to make your own dish and take it to her house saying "I just thought I would bring something to share". I know you said that she would be offended if you did that but I think that is the only answer. Could your husband have a talk with her and explain that you are on a very restricted diet under doctor's orders and it is just easier if you bring something that is allowed on your restricted diet. I don't know why she wouldn't understand that. Or, maybe you could go out to eat and then you could eat something safe.
