You poor mom! This sounds to be as hard for you as it is for him *hugs* Thank you for the long version of your post...you obviosuly care a great deal about your son and want him to get better ASAP!

Some things that are triggers one day may not be the next. In addition, not everyone can eat everything on the saftey list...you have to use trial and error. Did your son get stable at some point? Maybe he should go back to the basics to settle his stomach and then you could gradually add back in new foods and find the culprit? This is difficult enough for adults--but for kids it's even tougher! I teach 5 year olds, and one boy in my class has tummy problems. Getting him to drink his water bottle at lunch is a challenge--so I can't even imagine what you must be going through! Have you heard of peppermin oli? I've never tried it but I know many people on this board have and they've had success. I'm not sure what you put the oils in, but I'm sure you can do a search (or someone else can help out here) and give you more info. That might be an option for your son. The other option is cold peppermint tea! I used to HATE hot drinks as a kid...and even now I sometimes make myself hot tea and then cool it off to room temp. It's best if it's hot...but room temp. shouldn't hurt him!
