How about cooking veggies in more summery ways? I've found that you can grill just about anything. Grilled veggies always taste so much better than plain steamed things. I also rely heavily on my microwave during the summer, because there's no way I'm turning on a stove. I know it's not the same as fresh raw veggies, but fresh cooked veggies eaten cold really aren't so bad.

Also, have some soluble-fiber food before you eat the veggies... that'll lessen the impact significantly.
