First, welcome to this forum. It's one of the best on the web, caring, supportive, helpful and informative.
Now, to answer your question "First, I don't believe I had IBS before - No foods really trigered it. But now, could this be IBS??? If I did have IBS - is it possible that my symptons would change and if that's the case - will it ever return to the way it was???"
Yes, IBS symptoms change over time both for better and for worse. For years I only had a problem after a "rich" meal, too. And yes, it can get better. I've been stable now for over 4 months and before that I had two six-month periods with no D. By stable I mean no attacks of diarrhea.
It's possible that the high protein diet, which is very harsh on IBS tummies, finally caught up with you after 9 weeks. My sister, who also has IBS, got very sick from trying a high-protein diet. It will take awhile for your tummy to settle down again, but it will. If you take good care of it. You've made the first right step by posting your story here. Try some of the suggestions here and be patient and don't give up hope. Okay?!
A warm, gentle welcome!
