Hello. I've just registered, been reading the board for a few weeks (and I've been attempting the IBS diet for about 3 weeks).

Will you please suggest what kind of white bread alternatives are acceptable? I know the book / boards talk about french bread and sour dough, but those are not easily available to me this summer. What ingredients should I look for? What ingredients should I stay away from?

What about a bakery / food store that has nothing generally specified as 'french bread' but instead has a variety of breads that might be classified as 'french'? Which should I choose?

Also, are there any mass-market sliced-bread types that would be acceptable? (funds are very limited, and bread has a tendency to go stale.)

How do you preserve bread? In the freezer only, or can you put it in the refridgerator? How do you "unfreeze" the bread if you have no microwave?
