1) Here's what I found about food and iron on the very first site returned on a Google site: "Iron sources that have high iron availability include oysters, liver and other organ meats, lean red meat, tuna, and eggs (especially egg yolks). Other foods, including molasses, dried beans, dried fruits and dark leafy green vegetables, also contain iron but it is less easily absorbed into the bloodstream. "
adding some of these (the IBS safe ones) can help, as can taking and additional iron supplement. have you had bloodwork recently? that can tell you if you're having trouble with getting enough iron. generally speaking, most Americans get enough iron, and a regular CBC (type of bloodtest) can tell the doctor if you need further supplementation.
2) i have no problem eating roasted veggies. i can also tolerate steamed asparagus and broccoli. when i eat them, though, i cut them into very small bits and make sure i have plenty of soluble fiber in the meal itself.
3) are you asking about urinary incontinence or bowel incontinence? urinary incontinence is unrelated to IBS, i imagine, even though many of us feel we have to pee all the time. bowel incontinence should be avoided if you're following the diet and it seems to be helping. if you're having troubles with either, i would recommend talking to your doctor and having some tests done to rule out other problems. (with urinary incontinence, if tests rule out any physical problems, Kegel exercises can be helpful)
as for fibromyalgia: there is no identified cause for fibromyalgia. the only relationship i've ever read about between fibro and IBS is that many fibro patients have IBS as part of their symptom list. it is most likely the fibro causing the IBS or possibly just two separate syndromes coexisting in one (unhappy) person. there is no reason for anyone to fear that their IBS will lead to fibro.
