Gerry, I also have to cook two meals. It gets tiresome, doesn't it? I know just what you mean about not wanting to eat. By the time you get around to getting everything cooked, you're just so tired and bored with it, that it's just not fun to eat!!
My family DOES like fish, chicken, and turkey; but they also have to have their beef and pork and lots of it! Yuk! Anyway, I know how you feel about this.
I've tried to get my husband and son to eat what I eat, but they hate it. I've tried sneaking turkey meat in recipes, but it didn't work.
Here's what I do to make things a little easier. When I fix my chicken or whatever, I fix enough for several days and refrigerate or freeze it. Then all I have to do is heat it up. It helps eliminate a little of the cooking hassle at dinner time.
I usually have vegey soup with pasta in it for lunch. I can fix a pan of that, heat it up a bowl at a time for lunch, and it lasts me all week. I do sandwiches or leftovers for my guys for lunch.
This way, mine is pretty much taken care of, and my main dish cooking is for them. I hope this helps a little, Terri
