If you left it out at room temp I'd be suspicious of it. For the cost and simplicity and making some more, why not just make some more? I have used leftover oatmeal in baking, though -- fruit cobbler or bread or applesauce cake or something like that, but then I had a LOT of leftover oatmeal and was cooking for a LOT of people then!!
