I think you should get tested for Celiac (blood work first then endoscopy if necessary) first. If you go on a gluten-free diet and then test you will skew the results. My doctor told me I should keep bread or pasta in my diet everyday until testing was complete.

Another thought - Gluten free (seems like gluten is in sooooo many products!) is a huge alteration to your diet why go through all that when you don't even know if it is needed?
