SOY! Yep, there's a great soy sausage out there. I can even get it at the grocery store -- I don't have to go all the way down to the health food store 30 miles away. It's a bulk sausage, so you chop it up and brown it -- well, like you do bulk turkey sausage. It has a very unique flavor, and I found I can't use it in my spaghetti sauce for some reason; otherwise, it's great -- I love it in my lentil soup.

I use turkey sausage a lot, even though I'm sure there's dark meat in it. But I also like turkey ham, and I KNOW there's dark meat in that! It doesn't bother me -- but I eat it in small doses. I had it in scrambled Egg Beaters yesterday for breakfast, and even added a little soy cheese -- YUMMERS!
