Hi, Sherry. I'm in love with fennel tea! I drink a lot of it (just got it last week, but so far it's hard to rip the tea out of my hand. I don't even bother making other kinds of tea anymore!). I think you don't have to worry too much about how much you drink. All I know is my tummy loves it!
I have a tea press at home and at work. I love it! If you're going to be making a lot of loose teas by the cup, you've gotta get one. I toss 2 tsp of fennel into it, pour over my hot water, let it steep about 2 minutes or 2 and a half minutes and then *SQUISH!* push the seeds out of the way and pour my tea. Lovely! I bought my press at a local tea bar, but here's a different one online, so you get the idea: Bodum Personal Tea Press.
I also have one of those tea balls that you put loose tea in, but I've found that the fennel seeds, for some reason, don't work so great with that- the tea ends up weak. Maybe it's the size or the amount. Not sure.
