Hello, everyone! I found this site a few days ago, and I am SO glad that I did! Heather, THANK YOU!!!
I was diagnosed with a number of food allergies several years ago, but I knew I had IBS long before that. I have basically been following a vegan diet, so I am right on track with many of Heather's guidelines already (no meat, no eggs, no dairy). BUT, my allergies included wheat, peanuts, several kinds of nuts, sesame, and soy. I have tried to incorporate these foods back in at various times, but I always seemed to have a bad reaction. After reading through the site, I realize that my bad reactions may not have been due to the specific foods but to the fact that they are high in fat or I was eating too much fat along with these foods, or I was eating nuts and other insoluble fiber without eating any soluble fiber, or I was eating whole wheat and other bran-containing foods.
Today I decided I would give Heather's IBS diet a try. I had oatmeal with rice milk for breakfast followed by a glass of o.j. I indulged in a soymilk latte at Starbuck's (a special treat) and I had a SANDWICH (something I hadn't had in YEARS!) of an egg-free veggie burger (cooked in a nonstick skillet with just a mist of olive oil) with ketchup and mustard on a freshly-made sourdough roll (from Whole Foods). Ohmygawd, I was in heaven. It's been AGES since I had anything like this, and it was so good. I've also had peppermint/chamomile tea throughout the day. Tonight we are going to a friend's for dinner. I know she is making a potato and vegetable stew and I'm bringing low-fat homemade brownies for dessert. She's thinking (as I thought) that I could not have wheat, so there won't be any bread. I know she is having a salad, but I'll try to eat that last and with very little dressing.
So far I have had no allergic reactions and I am feeling GREAT. I am extremely hopeful that Heather's IBS diet will help me. I know for many of you the diet is restricting. However, as my diet as been much more restricted the past few years, if it works for me, it will expand my repertoire rather than limit it. (Bread!! If I can have white bread it will feel as though the world is opening up for me!!)
I am nearly dancing on the ceiling with optimism, excitement, and hope.
