1. I was tested negative for Celiac, so I am assuming I don't have a problem with gluten. I understand that Whole wheat bread and Whole grains can be irritating. Does this mean that any bread with the ingredients: Enriched Bleached Flour without HFCS s safe?
>I know Syl has already said High Fructose cornsyrup is not.
>Yes, white wheat without high Fructose cornsyrup is safe. Strive for white french or white sourdough in the artisan style (less confusing) that usually contain the basics: White wheat flour (enriched ok), yeast (or not in true sourdough), water and salt. I have found these at Trader Joe's and Sprouts.
2. Is is possible to be okay with Whole Wheat bread, but be irritated by Whole Grain bread?
>Yes, the insoluble part of the fiber
>I'm sorry, whole wheat and whole grain are synonymous as far as they both include insoluble fibers and anything but white soluble fiber is not safe to prevent ibs. How much one person's tolerance from one day to the next can differ with insolubles, so you would want to stick with white wheat soluble fiber for ibs. I slice mine on the thinner side, and is enough soluble fiber for me.
