Processing corn can change the ratio of soluble to insoluble fiber by removing the husk. The corn in tortillas is corn flour which doesn't have the same amount of insoluble fiber as a kernel of corn because it has been degermed - that is the bran has been removed and therefore much of insoluble fiber has been removed. In fact in this newsletter Heather says " Corn tortillas give a good soluble fiber foundation to this recipe" when talking about her chipotle fish tacos. And in Heather's cheat sheet she lists corn tortillas in the soluble fiber section.

In summary, depending on the form of the corn such as whole, flour or meal you may find the meal and flour safer. However, some people report they cannot handle corn in any form.
