Dr. Susan Shepherd's book Low FODMAP Diet (5th edition). She is one of the original researchers who along with Dr. Peter Gibson developed the FODMAP diet. If you look at the second link in my signature you can read one of their papers.
The reason I suggest her book is that she and Gibson are continuously updating the information on FODMAPs. For example recently their research showed the tofu is safe unlike other soy based products. Now that they have developed the theory and clinical trials have shown it to be effective they seem to concentrating on pratical issules like determining the level of various FODMAPs in common foods. This information is not easily available with doing extensive laboratory analysis such the paper referenced below.
