Thanks for the replies! It definitely makes me feel better that I am not alone. Hopefully I will be able to integrate fruits and veggies eventually but it's almost like I don't know how to eat without them (to break the cycle/see if fructose is an issue). Snacks/meals - I can only eat so many rice cakes and pretzels! (I know there are other options but I just have to make the time to explore them and that's tricky for me).
Gerikat - for some reason you reply didn't show up earlier. You symptoms sound pretty identical to mine. You say you are better now - what worked for you?!
