How much fat is too much?

I was just hoping someone could shed a little light on this issue for me. I have realized that for me (and I'm sure many others) that food items high in fat are a definite trigger for me (urgency and D). My question is, how much fat is too much? As a rule, I eat a relatively low-fat diet which is frustrating because I'm small already and didn't need to lose any weight in the first place, and it's virtually impossible to put any weight on in spite of the fact that I'm literally eating constantly, lol. (I'm 5'5", 115 lbs, just in case that makes answering my question easier).
I eat chicken burgers that have 7g/fat, and have eaten chicken burgers that have 13g/fat, neither of which bother me, yet once I had a blueberry muffin which had 11g/fat and found myself in the bathroom the next day. I use margarine with no problem, with a fat content of 7g/fat per 2 tsps, yet I had a few tasti-taters and some chicken nuggets (I can't recall how many g/fat were in each of these but I don't think it was overly bad) and was rushing to the bathroom half an hour later. There are other examples, these are just a few.
I know I've read somewhere before about the percentage of fat from calories being the thing to watch for (or something like that), but I can't quite grasp the concept of it. (I'm not sure if it's even related to what I'm asking!) It's all very confusing, but definitely worth trying to find out about.
