Acid over production is unlikely to be related to IBS unless you have GERD. It might be wise to ask your GP about using prilosec before starting.

Bloating and distention from gas production is one of the most common complaints from individuals with IBS. Unfortunately, they are also the symptoms that are difficult to relieve.

It definitely cannot hurt to remove excess fructose foods from your diet for a week or two and see how it goes. The first link in my signature has a good article on FODMAPs such as fructose that are known to produce gas in the colon. From a previous posting I believe you may have read the article already.
