Baking Substitutes For Butter and Oil

Since even if when I bake and use just enough smart balance light butter to meet the 25% requirement I still feel AWFUL after, I had a question.

Can I substitute something in place of butter and/or oil if not entirely than at least for 50% or 25% of the recipe?

Example: Cookies call for 1/2 cup butter...can I sub something for that entire 1/2 cup (Applesauce) and avoid butter altogether?

If a recipe calls for 1 TBSP oil and 4 TBSP Butter...can I just sub 5 TBSP applesauce for both?

Basically, can I reduce butter/oil with applesauce (or some other non-fat substitute) for as much of it as I want at the same ratio (1 cup substitute for 1 cup butter)?
