The link to the PDF article does not contain a particularly good explanation of a low excess fructose diet. The one I directed you to is much better and it puts in fructose context with other know problem foods for GI disorders.

Generally speaking vegetables don't have excess fructose. This more typical for some fruits such as apples, pears and mangos as listed in the table I directed you to.

Salads are unsafe because they contain uncooked veggies that are high in insoluble fiber. Read what Heather says on this web page

"Traditional green salads, a trigger food due to their high insoluble fiber content and typically oil-based dressings, are best eaten in small quantities and only at the end of meals, never on an empty stomach.

For salads that can be safely eaten as meals in their own right, try delicious alternatives like Summer Chicken, New Potato, and Green Bean Salad, Roasted Sweet Potato Cider Salad, or Thai Rice Noodle Salad with Shrimp and Mango."

Avoid the manago because it has excess fructose.
