My understanding is that 1 molecule of sucrose has 1 molecule of glucose chemically combined with 1 molecule of fructose. The sucrose molecule is broken down into it's component molecules of glucose and fructose and the energy released during this process acts like a "catalyst" enabling the easy breakdown of the fructose molecule. Otherwise, the liver is involved in digesting fructose. Please correct me if any of this is incorrect.
