I do this all the time because it's so much easier to make a double batch and keep it on hand. However, I don't keep it for long in the fridge; otherwise, it becomes real thick and you have to add more soy milk to the mix -- when the surface of the batter in the fridge turns dark, you know it's been in there too darn long!
