A product can have dairy even if it sayd lactoste free...it may still contain casein and/or whey...both dairy components.
You're right, the info. IS overwhelming! Try and take it slow...
Tea. Peppermint can be bad if you have reflux. Try chamomile and fennel instead!
This diet should not hurt you...even if you have another stomach ailment, this diet is mild and should not cause problems. HOWEVER make sure you are getting some insoluble fiber in your diet as well as some fat....without these the diet won't work!
