Irritable Bowel Syndrome Message Boards | Re: SYL!!! - VEGGIES

I am probably not the right person to ask. I am very sensitive to veggies.

My veggie diet is limited to boiled peeled carrots, peel cooked zucchini, very small amounts of sweet potato, squash and roasted peeled red peppers and a couple of tbs green peas every once in a while.

I eat 1/3-1/2 cup boiled peeled soft carrots at lunch and supper, 1/4 cup zucchini with lunch and what ever other small amounts of the other veggies I feel I can handle at meal time. Also, I save the water in which I boil carrots or other veggies and use it to prepare rice, sauces, anything that needs water. I can use the vitamins and minerals that leach from the veggies into the water to increase my nutrient intake

There are days when I think I am going to turn into a boiled carrot

Other days I call soft boiled carrots the IBS miracle veggie.
