The soluble fiber comes from pectin in the fruit and the added maltodextrin. The pulp is filtered out of the mixture removing most of the insoluble fiber.

Fruits and veggies contain a mixture of soluble and insoluble fibers. For some veggies or fruits when they are peeled the remainder contains roughly equal amount of soluble and insoluble fibers.
