Deli meats can contain preservatives such as sodium nitrate and sodium phosphate. Did you check to see if the deli turkey contained additives?

I believe in a previous posting I suggested you might remove applesauce from you diet for a few days and see what happens. Some IBSers have problems with foods that contain more fructose than glucose such as apples, pears, mangoes, etc. This problem is known as fructose malabsorption.
