I'm glad the Acacia in applesauce idea worked for you - it was a life-saver for me.
When I started on Acacia, I started with 1/4 teaspoon a day. After 3-5 days, I went up to 1/2 teaspoon a day. Another 3-5 days, 3/4 teaspoon a day. And so on. Every so often - like at 1 teaspoon, 2 teaspoons - I'd stick at that dose for a week. It took me a long time to go up but my body never complained about it.
That said, I'd tend to blame the California roll rather than the Acacia for the gas. For reasons I don't begin to understand a lot of people struggle with cucumber and avocado is high in fat. I tolerate both but when you're first starting out they can be tough - especially if you're not eating enough so they're going into a pretty empty stomach.
More IF sounds like a good idea for you. You'll probably find you'll do better if you peel, chop, cook, puree it to start with. Learning to love smoothies is a good way to get some IF into you, well smashed and mixed with lots of SF. I don't know anything about hemp milk but a lot of people who don't like soy or rice milk enjoy almond milk.
