Timing Meals and Snacks

Hi All,
I'm new to the board, but not newly diagnosed. I've been really struggling with meal/snack times. Here's a typical day:
6am wake up (gas and bloating)
Drink 1-2 glasses water
7am several soft stools
8am diarrhea
8:15am start teaching (the drive to work is torture everyday)
11am sometimes snack on saltines
3pm sometimes eat lunch
4-5pm snack
6pm dinner
8 or 9 pm citrucel
I have not been very strict on the types of food I eat. I just got Heather's book from the library and for the past few days have been eating more soluble fiber.
I am VERY nervous to eat at school because I'm scared I'll have an attack and have to run to the bathroom and I don't have the luxury. So instead I just don't eat. No food in my system means no bathroom right!
I know its not healthy and I'm tired and run down from it. So I'm hoping better food choices will help me be able to eat breakfast lunch and snacks.
Anyone else go through this mentality and how have you handled it?
