Zucchini has about 0.3 grams of excess fructose per 100 grams and some fructans. I use about 2 tbsp of peeled diced zucchini in a portion. I add 1 teaspoon of glucose (about 5 grams) to offset the fructose. I have notice that if I get exuberant and I use a bit too much or I forget to add the glucose I will have problems the next day.
I know what you mean about dietary limitations. I have been eating the same breakfast and lunch for two year. I only vary my suppers
