Is cooking with white wine okay?

I know alcohol is a big trigger. Last night I had stuffing that my mom made and she made me a special one with barely any oil, no cheese and less veggies mixed in. It seemed to be very safe, but then last night was the first night I didn't go to the bathroom in 2 weeks. She did cook it in white wine which I thought would be fine because the alcohol cooks away, but maybe not?

The other possibility is I had four of the bigger swedish fish for dessert, I haven't had those in over a year because I thought sugar and fat were IBS triggers, I'm still not convinced that sugar is not a trigger for me...but it could have been the stuffing as well. Thanks!
