I don't know what breakfast places are like in Wisconsin but in New Jersey if you order something at a diner it's cooked on the same giant griddle where they cook everything else. So whatever butter or fat is already on the griddle you get even if they don't add any extra.

Please don't be afraid to eat. Besides all the other reasons, it's really hard on your tummy. Take a look at kteach's suggestions for what to eat and at mine. Then figure out a simple menu. Or take a look at this old post and see how someone with IBS-C eats: web page.

And I'm afraid kteach is right - going out to eat is difficult when you're first starting out. You need to be very careful about what you eat in the beginning and it's hard to control what goes into restaurant food.
