I usually just boil pasta, rinse it with cold water, then throw in some chopped (small) red and green bell peppers and cukes. Tomatoes are tasty if you tolerate them - I don't! Black olives are nice too. You could throw in some peas and/or small broccoli florets the last few minutes the pasta is boiling too. Then I just throw on some low-fat italian dressing or some olive oil and vinegar to moisten it all.

Mmm...now I want this for lunch today!!!
