I was a little hasty last night. When I said:

I was mixing up two different ideas or at least not choosing my words carefully enough. Any reasonably sized portion of any low-fat food would reduce the percent of calories from fat in your salmon dinner. And (obviously) you need an SF base for all your meals. So the SF here is doing double-duty as a base and a low-fat balance to the salmon - but it's not only SF foods that can bring down the fat percent in a meal.

(Why do I have the feeling I just made everything more confusing?)
