EFI with a positive attitude

I have been on some form of the EFI diet for the past year (I didn't discover it until recently so I had been following my own version until then). I noticed that since I discovered this board I have been thinking a lot more about "cheating" and what I can get away with. After reading Sand's post I have to say that by telling each other what we can tolerate we are making each other feel better in the moment, but really since we can all tolerate different things- it really doesn't' matter that much if someone else can have coffee because I probably still can't. As a 23 year old with this disease I know how annoying it can be when everyone around me can eat fried foods, a glass of wine with dinners and 3 brownies in one sitting. However, in the spirit of a positive attitude I am going to list all of the great things that I did not eat a lot of before I was diagnosed with IBS and now I absolutely love them. Some of them I never would've discovered if I had not had to get more creative. Some of them I ate occasionally before but have become much more dependent on recently.

1. Vanilla Soy Yogurt- I love O'Soy and have recently started to enjoy Whole Soy once I found out how much less sugar it has.
2. Almond Butter (I am a huge peanut butter fan, but there is slightly less saturated fat in almond butter so I try to alternate between the two now).
3. Oatmeal with peeled apple slices
4. Apple Cinnamon Mini Rice Cakes
5. Sweet potatoes
6. Peppermint and Chai tea (I just tried chai the other day, I can't believe I had never had it before, so good!)
7. Vegetable sushi (careful if you don't handle veggies well of course)
8. Grilled chicken sandwiches
9. Oatmeal pancakes
10. Extra firm tofu with peanut sauce, sesame ginger sauce- sometimes mixed with noodles

I am new to this board so I don't know if this has been done before, but maybe if everyone lists their favorite "discovered" foods we can all get some great ideas to add to our diets. Happy Eating ☺
