Zara, I know what you mean about the "sugar epiphany" – I can't eat a lot of sugar either, and not just fructose (I recently tried a fruit cup experiment that failed miserably). I always felt better when I ate less sugar. And it DOES get easier - back when I was doing the Atkins diet, I found that within a month or so I was already becoming "turned off" by sugar. I used to put 2 sugars in my coffee every day, and suddenly one day I didn't want it anymore. I can't STAND sugar in coffee now – not that I drink coffee anymore but you know what I mean. And now when I bake I always cut the sugar by a third – if I use the entire amount called for I find it too sweet. And the stuff definitely contributes to gas and bloat!
Sarah, that's great that your dr wants you to eat more dairy – I'm jealous! Actually I'm doing better with the whole missing dairy thing – within the last month my cheese cravings have really begun to subside. Took long enough! And I'm so glad the GF diet seems to be working for you – hopefully you have found your magic bullet with this one! I just asked my dr to test me for Celiac last month because I couldn't recall if I'd ever been tested for it, and it came back negative. So now if I ever decide to try GF it will be by my own choice, rather than necessity.
